This was well worth my time and effort. I saw the stars as I cleaned my plate…licking lips!!!
Ingredients for Plantain Pancakes: Makes 6 Pancakes
1 big ripe Plantain
A handful of Whole Wheat Flour
1/2 cup of Coconut milk
Chopped red hot Pepper, Onions, Garlic and Tomatoes (see pics) – Had to spice it up with some healthy fillings.
Diced Red and Green Bell Peppers (see pics) – I practically put these in everything I cook for their unique benefits and flavour
2 tablesppons of Olive oil
More Olive oil to grease the pan
Seasoning – optional (did not add any so as to allow the natural sweetness of the plantain come through)
Boil plantain until soft then blend with coconut milk in a blender until smooth.
Add eggs plus oil and mix well, next add all chopped/diced ingredients and mix, and finally add a handful of the wheat flour and mix throughly until smooth.
Grease + heat a pan and scoop a spoon of the paste onto the hot pan, lower heat to a minimum and allow the pancake cook slowly and flip over very carefully so it does not break. Flip from side to side several times until the pancake is cooked to the insides.
Repeat process for all six spoons of the paste.
Ingredients for Sweet and Sour Sausage bites.
2 Turkey or Chiken Sausages
Half a lemon
Half a teaspoon of Honey
1 teaspoon of Apple cider vinegar
1 teaspoon of Olive oil.
Cut up sausages into bite sized pieces.
Pour 1 teaspoon of olive oil in a pan heating it up.
Add the sausage pieces and stir until almost cooked then add the squeeze of lemon, apple cider vinegar and honey stirring for 1 minute.
Serve sausages with the gooey liquid in the pan as this tastes divine on the plantain pancakes.
Try this out and give your feedback. Make several to store in your fridge or freezer for future meals.
Remember to handle carefully as the pancake is not as compact as a normal white flour based pancake.
